1 large avocado (or 2 small ones)
2 small cucumbers
1 spring onion, chopped
1 clove garlic, chopped finely
Handful coriander, chopped
125ml coconut water
½ lime, juiced
1.Combine all ingredients in food processor or blender until smooth, leaving aside some coriander and spring onion for garnish. Use more coconut water if needed.
- Refrigerate for one hour, garnish with coriander and chopped spring onion and enjoy!
