INGREDIENTS

1 large avocado (or 2 small ones)

2 small cucumbers

1 spring onion, chopped

1 clove garlic, chopped finely

Handful coriander, chopped

125ml coconut water

½ lime, juiced

Pinch cumin

 

METHOD

1.Combine all ingredients in food processor or blender until smooth, leaving aside some coriander and spring onion for garnish. Use more coconut water if needed.

  1. Refrigerate for one hour, garnish with coriander and chopped spring onion and enjoy!
