INGREDIENTS

500g sweet potato

500g multi coloured carrots

1 tbsp olive oil

Pinch of Himalayan salt

1 tsp ground cinnamon

METHOD

1.Preheat oven to 200 C

  1. but sweet potato into even wedges of slices
  2. Put in a big bowl multi colored carrots and sweet potato , add olive oil, salt and cinnamon and mix through so to coat
  3. On baking tray spread sweet potato and carrot evenly, being careful not to overlap
  4. Bake for 40 mins or until golden.
